Roasted Cherry Tomato Penne with Kale Pesto

We are on holiday. A long overdue, blissful, wonderful holiday. We haven’t ventured far – a one hour drive north plus another almost-hour on a ferry to Stradbroke Island. Despite having lived in Brisbane for just over five years now, we only first made it across to Straddie – as it is fondly known – earlier this year with some friends. We loved it – the chilled out, no-shoes, vibes was exactly what we were looking for. And so we came back.

Right now it’s late on Sunday afternoon. Both of the kids are fast asleep. I’ve got my computer set up at the long wooden table that takes up much of the main room here, big glass windows overlooking the deck. Perched up near the top of the hill, the house faces away from the road and feels as though it is nestled in the treetops. In the distance I can see the green-blue of the ocean, the beating of the waves a constant soundtrack. We just ate big bowls of quinoa salad for lunch and S and I have formulated a plan to stroll into town to eat gelato after the kids wake up. It’s a hard life, this one. Goat Cheese on Toast : 3 Ways

Stuff on toast – a staple in every diet! Avocado on toast is probably the most popular one in our house. There are few better breakfasts than fresh toasted sourdough spread thickly with ripe avocado, a squeeze of lemon juice, cracked pepper, sea salt, and a sprinkling of dukkah.

Another staple at our place is goat cheese – chévre – on toast. There is a small French stall in the market we go to that sells baguettes and croissants, home churned butter, and the BEST cheeses. While I was pregnant a role of their brie was all that I craved. They also have fresh goat cheese which they sell by the container. We often get some during our Saturday morning market run and then it’s goat cheese on toast for the rest of the weekend! So easy, and so good.

Chickpea Tabbouleh + Middle Eastern Feast

Cooking during a heat wave is a real pain in the arse. Queensland spent the weekend being baked to a crisp. The temperature in Brisbane crept up into the high 30s, although other parts of the state had it much worse. The bushfires on Stradbroke Island are still raging as a I type this; 60% of the island has burned and a smoky haze has swept over the city, turning the moon ripe orange.

During the heat of Saturday our house was practically a sauna. And that was while we were sitting still – with the oven and stove-top on it would have been outrageous. Poor W had her afternoon nap drenched in sweat. Wisely, we ate lunch in an air-conditioned pub and then spent the afternoon at the pool.
